Hydroxyacetone, also known as acetol, is an organic chemical consisting of a primary alcohol substituent on acetone. It is an α-hydroxyketone, also called a ketol, and is the simplest hydroxy ketone structure.
Hydryoxyacetone can be produced by degradation of various sugars. In foods, it is formed by the Maillard reaction, and can react further to form other compounds with various aromas. As such if finds some use as a flavoring.
Hydroxyacetone is commercially available but may be also be synthesized on a laboratory scale by a substitution reaction on bromoacetone. It undergoes rapid polymerization, including forming a hemiacetal cyclic dimer. Under alkaline conditions, it undergoes a rapid aldol condensation.

生产方法及用途

• 生产方法

  1.由丙二醇催化脱氢或溴丙酮与甲酸钾反应生成甲酸丙酮醇酯,然后水解制得。也可由甘油或丙二醇催化脱氢制得。 
  2.将工业丁酮进行精馏、超净过滤、超净分装,得到BV-Ⅲ级丁酮。 
  3.制法: 于装有搅拌器、回流冷凝器的反应瓶中,加入甲醇(含水<0.2%)500mL,搅拌下慢慢加入甲酸钾110g(1.2mol),充分搅拌并加入使之溶解。冷后慢慢加入溴代丙酮①
  (2)140g(1mol),很快出现KBr沉淀。回流反应15h。冰盐浴冷却,滤去溴化钾,分馏回流甲醇和甲酸甲酯,而后减压分馏,收集30～40℃/5～1.6kPa的馏分,得羟基丙酮②
  (1)17g,收率45%。注:①溴代丙酮具有强烈的催泪和刺激作用,使用时应特别注意。②羟基丙酮不稳定,容易聚合,但配成50%的甲醇容易,可保持一年以上。

• 用途

  1.用作制取药物、香料、染料等。贮存时可加甲醇作为稳定剂。有机合成中间体、硝酸纤维素的溶剂、肽合成保护剂。 
  2.电子纯丁酮应用于电子工业集成电路光刻工艺的显影剂及工艺的清洗剂。MOS级主要用于分立器件及大、中规模集成电路,BV-Ⅲ级主要用于超大规模集成电路的生产。
